Seasonal cooking with a creative touch and a lean towards the sea. Starters run from papaya salad with shimeji and oyster sauce to a homemade txangurro terrine and marinated tuna on cucumber carpaccio; mains include low-temperature salmon with béarnaise, corvina with prawn red curry and pak choi, free-range chicken with huancaína and a beef tenderloin with ratte potatoes.
