Its name comes from tatemado, a pre-Columbian Mexican technique of roasting food directly over embers or open flame until the surface chars, and that smoky mark runs through a menu that puts vegetables at the centre: fried broccoli with sesame, roast carrots with baba ganoush, grilled corn with popcorn dust. About Tatema
The Story
Tatema was opened in the last weeks of 2019 by Argentine chef Lucho Fasciolo and partners including Diego Torres, formerly of DiverXO. Fasciolo had been head chef at Sacha, and before that cooked at NODO and Yakitoro. Rather than an Argentine asado, he took the fire and the Mexican tatemado technique as the restaurant's signature. It holds a Solete in the Guía Repsol.
The Cuisine
Cooking over embers, travelling freely between Latin America, Asia and the Mediterranean, with vegetables given as much attention as meat and fish. Most dishes can be ordered as half portions, which makes it easy to share and try more of the menu, and there are vegetarian options.
What to Order
House classics include the fried broccoli with sesame dressing and cured cheese, the roast carrot salad with baba ganoush and toasted peanut, and the tatemada corn with popcorn dust, Parmesan and roast-garlic alioli. From the current menu: green asparagus and grilled Brie with cured yolk and Iberian pancetta, burrata with citrus couscous and roast grapes, a tatemado tuna aguachile, chicken anticucho on corn cream with corn 'torreznos', pork ssäm with tonkatsu sauce, and an ember-grilled rice with boletus, red-prawn carpaccio and sheep's cheese emulsion. A 400-gram lomo alto with chimichurri is the big-ticket meat. For dessert, the brioche filled with dulce de leche ice cream and warmed on the grill is the crowd-pleaser.
Drinks and Group Menu
The bar mixes micheladas with a tatemada sauce and its own takes on classic cocktails, and the wine list, short and eclectic, runs from Sanlúcar manzanilla and ancestral Penedès sparklers to Austrian Grüner Veltliner, Piedmont Nebbiolo and Spanish reds, by the glass or bottle. For groups there's a set menu at €43.50 a head with shared starters, three mains, a dessert tasting, one drink and sourdough bread from Obrador San Francisco.

Tatema serves without a break every day from 13:00, until 01:00 Monday to Thursday, 02:00 on Friday and Saturday and 00:30 on Sunday. Tables can be booked online.
