The Story
Yakitoro came out of a trip to Japan and the idea that the traditional yakitori taberna could be done in Spanish. The name puts together the Japanese 'yakitori', the grilled skewer, and 'toro', the Spanish bull.
The Cuisine
The cooking is Spanish recipes in yakitori key, a way of eating tapas with everything skewered, charcoal aromas and home flavours. The skewers are grilled live over charcoal.
The New Carta
After more than ten years around the fire, Yakitoro launched a new carta that keeps reinterpreting yakitori its own way and now describes the cooking as Japanese fusion that travels the world, centred on the grill. The poultry yakitori run from charcoal chicken with kimchi and sharp guacamole and crisp fried chicken with a 'cañí' sweet-and-sour sauce to tsukune meatballs lacquered with tare and salsa vizcaína, and duck magret with red vermouth and miso. The 'yakitoros' bring in the rest of the world: a yakikebab, marinated salmon with yogurt, apple and fennel, pork belly with Peking sauce, eel with orange teriyaki, lacquered Wagyu short rib with house chimichurri, sirloin with peanut and Thai red curry, lamb with ají panca and red miso, and roast bone marrow with hamachi tataki.
Starters, Bocatas and Two Addresses
To start there are artichokes with fried-egg sauce, chicken yakisoba, bravas with chistorra, tempura Chinese aubergine with satay, charcoal rice in banana leaf, slow-cooked torreznos with hoisin, and a lemonfish ceviche with passion-fruit leche de tigre; the 'yakibocatas' include a duck pibil katsu bao and a crisp prawn bao. Desserts take in green-tea tiramisù, the original Yakitoro cheesecake and a dark-chocolate mochi-brownie, and there's a selection of dishes adapted for coeliacs. Most skewers cost between about €7 and €13. There's a second Yakitoro on Calle de la Reina, near Gran Vía, and both take group menus.
