Savas is a small cocktail bar on Calle de la Sombrerería, in Lavapiés, holding a Repsol Solete. The owners run the room themselves, it's pared back and minimalist, and the drinks are the whole point: signature cocktails alongside classics such as the margarita, the Tom Collins and the White Russian, plus a house lemonade of apple, lime and chai masala. It's closed on Monday and Tuesday.

Background

About Savas

The Story

Savas opened in 2019 on Calle de la Sombrerería in Lavapiés, founded by Lithuanians Dovile Krauzaite and Gintautas Arlauskas, who still run the room themselves. Within two years it had won the Academia Madrileña de Gastronomía's Bares y Tragos award for 2021 and entered the World's 50 Best Bars extended list at #98 that same year, and in 2025 it was also recognised by the Top Cocktail Bars guide. It holds a Repsol Solete.

The Cuisine

A short list of around twelve cocktails, simple and built on the classics with a Nordic touch, alongside signature serves. The list includes a margarita, fizzes, a Tom Collins and a White Russian. There's a house lemonade of apple, lime and chai masala for anyone not drinking, craft beer from La Caníbal, and pretzels to snack on.

Industrial and casual in feel, with personal, one-on-one service and cocktails at the centre. It reads as a low-key neighbourhood bar rather than a scene.

Getting There

It sits on Calle de la Sombrerería in Lavapiés, central Madrid, uphill from the Rastro and near the Reina Sofía.

Nearby

Lavapiés is a steeply layered corner of central Madrid, a tight grid of narrow streets where the cooking comes from everywhere at once. The rooms are small, the prices are honest, and the good ones fill with regulars rather than reservations. Museo Reina Sofía and CaixaForum Madrid sit uphill from it, El Rastro at the bottom.
