About Sua

The Story

Sua trades as Sua by Triciclo, the grill house of the Triciclo group led by chef Javier Goya, on Calle de Moratín in the Barrio de las Letras, a few steps from the Paseo del Prado. The team took over a historic premises and set out to cook simply and faithfully to the origins, going back to embers and grills, in a pure, traditional style that recalls their training years in the Basque Country. The name means fire in Basque and nods to Basque mythology, and the house calls itself a sanctuary of fire. It's listed in the Michelin Guide.

The Cuisine

A Basque-style grill working over embers, its own site says, on premium meats, wild fish and traditional stews, cooked simply and faithfully to its origins. The kitchen leans on carefully chosen local producers and seasonal produce, betting on sustainable gastronomy. The menu is on the venue's own site.

From the Grill

Meat is the centre of the carta: aged vaca vieja, Galician entraña, vacío with sherry-glazed spring onions, onglet over the coals, all bought to the highest standard the house can find, alongside wild fish and traditional stews. Starters in 2025 included a thin sheet of old-cow beef rolled at the table with mushroom escabeche, cheese and pine nuts, grilled baby leeks from Tudela, red prawns with a smoked cecina cream and burnt lemon, and cecina croquetas off the menu; other dishes have included a tuna 'txuleta' with piparras and a beef anticucho with chaufa rice, a Peruvian touch. Off-menu dishes are read out with their prices. For dessert, a blue-cheese cheesecake with apple crumble and red-fruit ice cream has earned a following.

The Triciclo Connection

Sua's sister is El Triciclo, the group's original restaurant, opened in 2013 a few streets away on Calle de Santa María. The kitchen buys from carefully chosen local producers and works with the seasons. Sua also hosts private events and group bookings.

A big, bright room with tall windows onto the street, plenty of greenery, white tablecloths and metal chairs, and a large meat-ageing cabinet on show beside the bar. The best seat is out back: a covered patio, the winter garden, with a gazebo in the middle and greenery all round, especially pleasant at dinner. There's also a terrace.
