Santos y Desamparados is a cocktail bar on the Costanilla de los Desamparados, in the Cortes corner of Barrio de las Letras, and it holds a Solete in the Guía Repsol. It's the creation of Madrid bartender Alberto Villarroel, who cut his teeth in the bars of Ciudad Lineal and Aluche and spent three years behind the bar at 1862 Dry Bar, whose owner Alberto Martínez is his equal partner here. The look is unapologetically dark: illuminated crosses, an iron-and-wood confessional, old portraits and nooks for hiding away, with Tool, Placebo and Van Morrison on the stereo, and a short list of classic and signature cocktails poured until 03:00.

About Santos y Desamparados

The Story

Alberto Villarroel, a nearly two-metre-tall Madrileño from the Quintana neighbourhood, started out in late-night bars in Ciudad Lineal and Aluche before a cocktail course with Andrea Bottesi changed his path; he then spent three years at 1862 Dry Bar on Calle del Pez. The inspiration for Santos y Desamparados came from trips to Kraków, and Dry Bar's Alberto Martínez came in as an equal partner. It opened on 5 March, the same day as the nearby cocktail bar Distinto, and an award for best opening pushed it to broaden its list with more long drinks alongside the classics. It holds a Solete in the Guía Repsol.

The Cuisine

Cocktails rather than food: a short list of about 14 drinks split between house favourites, reworked classics and low- or no-alcohol options, now designed with Miguel Ángel Jiménez of Libé Unique Cocktails.

Dim, gothic and theatrical, with a bar that feels like an altar, illuminated crosses, a confessional, a cage of metal tools by craftsman Andrea Bottesi and plenty of reservados and corners. Metal, rock and gothic music is part of the experience rather than background. Service is attentive and talkative: this is a bar where you chat with the bartender about what goes into each drink. Dogs are welcome.
