The Story

Shibari sits on Calle Mira el Río Baja in Embajadores, near the Rastro, a taberna where the venue set out to give Japanese cooking another story. It calls itself a restaurant with the soul of an izakaya, built on produce, precise technique and direct fire, and it's listed in the Michelin Guide.

The Cuisine

Contemporary Japanese built on produce, technique and fire, with an omakase tasting menu alongside the carta. The robata charcoal grill is central: a Japanese tradition that cooks over vegetable charcoal at high heat without flame, lending its own aroma.

The Name and the Fire

Shibari is the Japanese art of binding, and here the word is read as 'bond', a link between Japanese tradition and the neighbourhood. The restaurant is humble and informal, on Plaza del Campillo del Mundo Nuevo, and the robata is its signature: Japanese charcoal grilling over vegetable charcoal at high heat without flame, which the team works in view of the counter and the room. Sushi is the other half of the offer.

Omakase or Carta

There's an à la carte menu, but the omakase is the way to see the range, a run through the kitchen's most representative dishes. Those have included a monaka of snow crab with smoked baby eel and a brioche of quisquillas passed over the robata and finished with shichimi, the Japanese seven-spice blend, alongside nigiri, maki, a miso aubergine and smoked duck. Premium cuts such as toro and wagyu push the bill up.

Rastro Sundays

Shibari opens Wednesday to Saturday for lunch and dinner and on Sunday for lunch, timed for Rastro mornings in the barrio. It closes for a two-week summer break at the end of August and runs an adjusted summer timetable in July and August, so check before a summer visit.
