The Story

Quispe is one of the most common surnames in Peru, and the restaurant takes it as a tribute to mixing: the Quispes, as the house tells it, have blended with many cultures and origins, a fair picture of Peruvian society. The carta follows that idea, with nods to Spain, China and criollo cooking and a selection of makis and nigiris for the Japanese influence. The room is intimate, elegant and warmly lit, good for a date or a group of friends.

Cold Kitchen

The carta spells them 'cebiches, with a b'. The clásico of corvina in classic leche de tigre is €26, the Quispe adds squid chicharrón to an ají amarillo leche de tigre (€28), and there's a green corvina cebiche with coriander and one of bluefin tuna with tamarillo and black trumpet mushrooms, or a trio for €36. Tiraditos include almadraba tuna with ponzu and ají amarillo, salmon with passion fruit, and a 'bachiche' of hamachi with parmesan emulsion and hijiki. Causas come with prawn tartare, acevichada corvina on a black squid causa, or almadraba tuna with tonnato sauce. The Nikkei section adds makis of panko prawn and tuna and nigiris from €8 a pair.

Hot Kitchen and Group Menus

To share there are rocoto oysters, robata-grilled U10 scallops in chupe sauce, fish and squid chicharrón, charcoal octopus with anticucho sauce, a pastel de choclo with osso buco, and yuca empanadas filled with lomo saltado. Mains run from ají de gallina (€22) and a seafood chaufa to arroz con pato (€28), lomo saltado (€29) and Angus short rib in seco norteño sauce (€32). Group menus start at €60 per person with house wine, sharing cold and hot plates and desserts like suspiro a la limeña, and whole cakes can be ordered separately.
