About Posada del León de Oro
The Story
The Sanz Montero family's great-grandfather, Hipólito Montero, bought the Posada del León de Oro around 1880, and five generations have run it since, with a sixth on the way. The building dates from the early 17th century, on land that belonged to the convent of Nuestra Señora de la Merced. It worked as a posada until 2001, then closed for a full refit and reopened in 2010 as a boutique hotel; the house calls it the third-oldest hotel in Madrid.
The Cuisine
The kitchen sticks to Madrid tradition, with cocido madrileño and a boned rabo de toro as the dishes it holds up as its best examples.
Three Rooms and a City Wall
The restaurant has three spaces. In the dining room, wrought-iron tables sit over the remains of Madrid's 12th-century Christian wall, built of flint and visible under a glass floor. The corrala, a typical Madrid courtyard of small homes off galleries, keeps its original structure and is where wine is poured slowly and plates are shared. The bar runs on wines, vermouth, gildas and patatas revolconas.
The Cocido
The cocido starts at midnight: knuckle and spine bones go in first, then Iberian ham bones, hen, beef shin and acorn-fed Iberian bacon, the soaked chickpeas and two fresh cabbages on top, simmering in Madrid water for about fifteen hours in all. It's served in the classic order, noodle soup first, then the chickpeas and vegetables, then the meats, with piparras, spring onions and grated tomato. It's on from October to May at €24.90 a head Wednesday to Friday and €32.50 at weekends and holidays; out of season it can be made for groups of ten or more. There are also set menus at €39, €49 and €59.
