Pipilacha runs a single tasting menu of fifteen passes, each one built around a different edible flower used as the main ingredient rather than a garnish: borage in a mojito-like bite, nasturtium with ajoblanco, shiso and dahlia with scallops, chrysanthemum with roast courgette. It seats eight per service at a counter facing the open kitchen, where chefs Arán Rodrigo and Noé David take turns, one cooking, the other talking you through each dish. The menu is €85, with a six-glass pairing for €60 more.

About Pipilacha

The Story

Pipilacha is run by two co-founders and chefs, Arán Rodrigo and Noé David, who asked what happens when flowers are treated as a real ingredient, with the same rigour others bring to meat, fish or vegetables. Arán works on the flower as the main ingredient, its flavour, technique and origin; Noé researches what happens when it's fermented, dried or turned into flour. They call it the only restaurant in the world built entirely on flowers.

The Cuisine

One tasting menu, changing with the seasons as new edible flowers come in. The summer 'Solsticio floral' runs fifteen passes, from a lime-blossom taco and a peach-blossom bite with anise to lavender butter with house sourdough, monkfish with boletus and petals, quail with acidic flowers, and a liquorice, chocolate and cardamom dessert. The pairing is six glasses of small-producer wines or house ferments.
