La Tienta is a taurine taberna on the corner of Alejandro González and Alcalá, by the Las Ventas bullring, open since 1952 and refurbished in 2018. It holds a Repsol Solete, its torreznos won the Mejor Torrezno de Madrid in 2026, and the carta runs from rabo de toro and oreja to a Thursday cocido. During San Isidro it's one of the busiest bars around the plaza.

About La Tienta

The Story

La Tienta opened in 1952 on the corner of Alejandro González and Alcalá, one of the bars ringing the Las Ventas bullring, and the name itself is a bullfighting term: the tienta is the test breeders run on young cattle to gauge their bravery. Seventy-odd years of cañas, tapas, afternoons of bullfights, flamenco and tertulia later, it's still standing while other historic bars near Las Ventas have closed. Rather than play it safe, the owners took on a major refurbishment, reopening in spring 2018 with modern fittings that kept the feel of a classic taurine tavern. It's run today by Ángel Martín, whose family roots in Ávila show in the torreznos and the patatas revolconas.

The Cuisine

Madrid taberna cooking with a Castilian accent. The torreznos come stacked in a tower as a welcome, and were named the best in the Comunidad de Madrid in 2026. Beyond them: ibérico boards, the house tomato 'La Tienta', ensaladilla with tuna belly, ham croquettes, oreja al ajillo with brava sauce, lamb sweetbreads, cazón en adobo, rabo de toro stew, callos with chickpeas and grilled meats up to a 40-day-aged Simmental chuletón. Cocido is on every Thursday.
