The Story
Himalayan Tandoori is the project of three partners of Nepali origin, settled in Spain, who set out to cook the traditional flavours of Nepal and India. It sits in the Concepcion quarter of Madrid's Ciudad Lineal district.
The Cuisine
The kitchen is Nepalese and Indian, with the clay tandoor at its centre, the cylindrical oven whose high, dry heat gives these cuisines their signature breads and char. The founders frame it as the original flavours of Nepal, cooked to Spanish restaurant standards.
The Nepalese Plates
The Nepali side of the carta starts with momos, steamed dumplings of minced chicken breast or of fresh cheese and vegetables, and kukhura ko pakoda, chicken strips in chickpea batter. The 'tandoori especial' section is mostly Nepalese: kukhura ko sekuwa, chicken breast cooked the traditional Nepali way in the tandoor; pahadi kukhura, marinated in Nepali achar and lightly spicy; the same two treatments for lamb; a paneer sizzler; and a Himalayan sizzler of lamb tikka, chicken tikka and spiced vegetables served with rice or naan.
Tandoor, Curries and Biryani
From the tandoor come murg tandoori, chicken and lamb tikka, tandoori king prawns and a Himalayan mixed grill. The curries are grouped by heat: mild house specials such as murg makhani, mango chicken and rogan josh; tikka masala, korma and karahi; then medium-hot jalfrezi, spicy Madras and very spicy Goan vindaloo, each with chicken, lamb or prawns, and any house curry can be made spicy. There's a long vegetable section, from sabzi of seasonal vegetables Nepali-style to dal makhani, chana masala, malai kofta and palak paneer, plus biryanis slow-cooked with saffron and cardamom. The team says it caters for vegetarian, vegan and coeliac diners, and the room hosts birthdays, family gatherings and business lunches.
