La Hummusería is an Israeli hummus bar on Calle de Hernán Cortés in Chueca, opened by Lotam and Shia, who fell for Madrid and moved here from Tel Aviv, and it holds a Solete in the Guía Repsol. Hummus is served warm with toppings and fresh pita, alongside salads, roast aubergine, shakshuka and maklouba, and the kitchen runs non-stop from 13:00 to 23:00 every day. The Story

La Hummusería was opened by Lotam and Shia, who fell in love with Madrid and moved from Tel Aviv to start an Israeli gastrobar. Some dishes come from the cooking of grandmother Fortuna, such as the slow-cooked white beans in tomato sauce with rice. The team also runs a falafel spin-off and delivers through Glovo and Uber Eats.

The Cuisine

Middle Eastern and Israeli home cooking built around hummus, served warm with toppings and fresh pita, with gluten-free bread available. Most of the menu is vegetarian, and dishes are marked vegan, gluten-free or mild.

The Carta

Hummus comes classic with garlic and chilli (€9.90), with mushrooms, with matbucha, the slow-cooked North African tomato sauce, or with pine nuts and almonds (€11.90); a free red zhug adds serious heat. Starters include spicy watermelon with feta and dates, roast aubergine with tahini and dukkah, 'Sofia's aubergine' with matbucha and feta, a beetroot carpaccio and a sesame bagel with matbucha and za'atar. Salads run from Greek and fattoush to a chopped 'Middle Eastern Market' salad. Mains are grandmother Fortuna's white beans, maklouba, the upside-down rice with cauliflower, aubergine and almonds served with a spiced pear jam (€15.90), and shakshuka, classic or Balkan with feta and spinach. Desserts include malabi, a kataifi and pistachio biscuit and a basbousa semolina cake.

Drinks, Lunch Menu and Hours

To drink there's homemade lemonade and iced tea, beers including a gluten-free one, a short list of boutique Spanish wines by the glass from €3.60, and cocktails such as an ouzo with dates and mint. On weekdays until 16:30 the €14.90 menú del día brings a drink, harira soup or roast beetroot, a hummus or the white beans with rice, and coffee or dessert. It opens every day from 13:00 to 23:00 with the kitchen running non-stop; book online, or just walk in.
