La Casa de las Torrijas is a castizo taberna at Calle de la Paz 4, a few steps from Puerta del Sol, founded in 1907 by Luis Montón, the Tomelloso wine merchant who also founded El Anciano Rey de los Vinos. Its namesake torrijas, soaked in milk or sweet wine, are made daily and served all year, alongside Madrid tavern cooking. It carries the Ayuntamiento's Comercio Centenario plaque and is open every day from 11:00 to midnight.

The Story
Luis Montón, from Tomelloso, came to Madrid with his own wines and opened a tavern on Calle de la Paz in 1907, one of the four he ran; the one on Calle Bailén is El Anciano Rey de los Vinos. Madrid's tourism office dates the tavern premises to 1842 and describes torrijas as its speciality since 1907. Rufino Sánchez took it over in 1970 and ran it until he retired in 2015, when it closed; in 2016 a Mexican-Spanish restaurant group reopened it, keeping its classic style. It's on the Ayuntamiento de Madrid's register of Comercios Centenarios.

The Torrijas
The house torrijas come in two classic versions, soaked in milk, sweetened with honey and scented with cinnamon, or in sweet wine, and are fried fresh every day. When it reopened, the house also offered them 'baptised' with a spirit such as orujo cream, Grand Marnier or bourbon, or topped with dark chocolate, dulce de leche or fruit; ask what's on today.
The Rest of the Carta
Around the torrijas, the carta sticks to tavern classics: salmorejo and gazpacho, tortilla made to order with or without onion, huevos rotos, homemade croquetas, callos a la madrileña, rabo de toro, a slice of salt cod, calamares and the calamari bocadillo, albóndigas, grilled octopus and torreznos, with cocido on Wednesdays when it reopened. To drink: Madrid DO wines, vermouth on tap and Madrid craft beer.
