La Ancha is a traditional Madrid casa de comidas at Calle Zorrilla 7, in the Cortes barrio of Centro, family-run with more than 100 years of history. It carries a Solete in the Guía Repsol, the cooking is simple, market-led and unfussy, and it's famously hard to book, so plan ahead. Lunch and dinner run Monday to Saturday, closed Sunday.

About La Ancha

The Story

La Ancha is a family restaurant with more than a century behind it. In 1919 Benigno Redruello opened the family's first tavern, La Estrecha; nine years later his son Santiago took it over, enlarged it and renamed it La Ancha. It moved to Calle de Velázquez in 1957 under Antonio Redruello, then to Príncipe de Vergara in 1969, and in 1988 this house on Calle Zorrilla opened with Antonio's brother Benigno in charge. Since 2005 the fourth generation, brothers Nino (in the kitchen) and Santiago Redruello (on the business side), have run it and grown the Familia La Ancha group, which includes Fismuler, Armando, Tortillas de Gabino and Taberna de la Ancha. It carries a Solete in the Guía Repsol, and it's a hard table to get, so book ahead.

The Cuisine

Traditional Madrid cooking in the casa de comidas mould, market-led and changing daily. The carta runs to classics like callos a la madrileña, the house Escalope Armando, solomillo and steak tartar, and it's on the venue's own site.

The Carta

The carta changes daily with the market. Starters are the classics: boquerones adobados, a matrimonio of anchovy and boquerón, Spanish tortilla stewed with clams a la marinera or with callos, a tortilla velazqueña, anchovies a la bilbaína, garlic prawns, fried line-caught squid, ham croquetas and cazón adobado. There are Gernika peppers, fried artichokes with yolk and ham, pisto with a fried egg, pickled-partridge salad and an ensaladilla with corn mayonnaise, and spoon dishes like cocido broth and stewed lentils.

Fish, Meat and the Escalope

Fish might be grouper or corvina belly, bonito a la riojana, hake tail a la bilbaína, hake cheeks with saffron pil pil, baked Celeiro hake, Barbate sea bass in salt for two, monkfish a la bilbaína or squid in their ink with rice. Meat and casquería include a Café de París sirloin, breaded kid criadillas, a 40-day aged Frisian beef chop for two, steak tartare, callos, lamb's brains and Ibérico meatballs. The Escalope Armando, the breaded veal cutlet the family later spun off into its own restaurant, comes plain or with egg and truffle, and there's a 'baby' version.
