The Story

Sagardi Cocineros Vascos was born from the dream of two brothers, Iñaki and Mikel López de Viñaspre, with a mission to revive, promote and develop traditional Basque cooking and share it with the world. This Madrid address, on Calle Jovellanos, sits in the Euskal Etxea, with a pintxo bar and a dining room; the group's second Madrid restaurant is on the Castellana, and it also runs Sagardis in Barcelona and Valencia.

The Cuisine

Basque asador cooking over holm-oak embers. To start: guindillas de Ibarra, Gernika peppers, Getaria anchovies, txistorra de Orio and croquetas. Then tortilla de bacalao 'Roxario', marmitako, callos, hake from Pasaia with clams, and turbot, besugo and monkfish by weight from the Basque ports, plus txuleta from old cows aged over six years. Vegetables come from the group's own organic gardens.
