The Story

Kitchen 154 is a small Madrid group of three restaurants inside the M-30, Vallehermoso, Noviciado and Conde, each with its own carta, set up to serve tasty, mostly Southeast Asian food with fresh produce, in unpretentious rooms at affordable prices, and to push back against a dining scene too concerned with appearances. Conde is the group's place in the very centre, in the Madrid de los Austrias, and it's modelled on a Vietnamese bia hoi, the kind of spot that serves very cold beer and very tasty food. The team admits it isn't the most comfortable room, but it's fun and meant to feel like home.

What's on the Carta

Conde is where the group serves its charcoal-grilled sardines and its fried-egg 'no-salad', a yum kai dao that has become a bit of a house favourite. The rest of the short carta runs from Burmese potato dumplings, sweet-chilli fried chicken and smashed cucumber to bonito nam jim and an Isaan-style nam tok. For something bigger there's a beef massaman curry, a fish-ball curry (gaeng karee luk chin), khua kling, the dry southern-Thai mince curry, hake with black pepper, chu chi pla fish curry, and a mushroom sambal. Like the other branches it works in sittings, and on some days the kitchen stays open between lunch and dinner.
