Kitchen 154 started here, in the aisles of the Mercado de Vallehermoso in Chamberí, about ten years ago, and it holds a Solete in the Guía Repsol. The open kitchen cooks semi-traditional Asian street food, leaning on Thai and Korean flavours, with fresh produce bought from the market's own fishmongers, poulterer and butcher. The signatures are Korean ribs with kimchi, red curry with king prawns, butifarra dumplings and Sichuan aubergine, at prices well below the market's starrier neighbours.

Background

About Kitchen 154

The Story

Kitchen 154 is a small group of Madrid restaurants, three of them, all inside the M-30: Vallehermoso, Noviciado and Conde, each with its own carta. Vallehermoso was the first, opened about a decade ago in the Mercado de Vallehermoso, and the group still treats it as its reference point. The stated aim is to push back against a dining scene too concerned with appearances: less posturing, more enjoyment, and food that's 'tastier than pretty'.

The Cuisine

Mainly Southeast Asian, with Thai curries and Korean dishes at the centre, cooked with fresh produce and with the chilli tuned to Western palates. The market vendors who watched the place grow, including fishmongers Javi and Anita, Higino the poulterer and Antonio the butcher, supply much of what goes into the dishes.

The Carta

The menu is short and comes in half or full portions for some dishes. Korean ribs (€19) and red curry with king prawns (€19) are the house standards, alongside dan dan lamian noodles (€16), Sichuan aubergine (€12.90) and dumplings (€10.90). There are more curries: a vegetable red curry, chicken stir-fried with green curry, baby squid with a southern Thai curry and a Hanglay curry of pork cheek. Sweet chilli wings and yum pla duk fu, the Thai crispy catfish salad, round it out. The Guía Repsol also mentions a yellow curry with the fish of the day, house kimchi and pickles, and off-menu dishes.

Good to Know

There are vegan and coeliac-friendly options, and the menu lists allergens dish by dish. The room is small and part of the market itself, so this is a place for a quick, punchy lunch or a lively dinner rather than a long quiet meal. It opens for lunch every day and for dinner Monday to Saturday.

Experience

Kitchen 154 Dining Experience

Small and loud in the best way. The counter takes up part of the market's aisles, and music and shouted orders across the bar mix with the coming and going of waiters, cooks and customers. The group calls this room 'our parents' house' and describes it as a Spanish tasca inside an old-school Madrid market.

Getting There

It's inside the Mercado de Vallehermoso, at Calle de Vallehermoso 36, in the Arapiles barrio of Chamberí.
