The Story
Miga Cana opened as a new space inside the Mercado de Vallehermoso, and its own framing is tradición renovada, a la vieja nueva usanza. The idea, it says, is to bring the market back to what markets used to be: somewhere people meet over food.
The Cuisine
Traditional guisos, revisited. Product leads and the house is blunt about it, honest ingredients and no more elaboration than a dish needs, with platos de cuchara given the starring role and seasonal produce setting the rest. The carta runs from croquetas and vermouth to artichokes, callos, fabes with partridge, rabo de toro and a spicy morcilla with roast pepper and vermouth-poached pear; many dishes come as half portions, and a passion-fruit mousse closes things out. The Mahou on tap gets its own praise.
