About Kaldea

The Story

Kaldea grew out of a plan to recover traditional dishes and the old techniques of the slow-simmered pot, cooked with art and an eye on the avant-garde. The name is meant to evoke the warmth of home, the brasero you sat by with your grandparents, and the menu remembers grandmothers' and mothers' cooking. Chef Víctor M. Mesas Moreno calls it his own home and brand, after a decade in kitchens and training at the school of Luis Irizar, the teacher of a generation of Basque chefs.

The Cuisine

Traditional Spanish cooking from every region, product-first and seasonal, with modern technique. The carta published by the restaurant runs from pintxos (gilda, a 'matrimonio' of anchovy and boquerón, sobrasada, tortilla) to openers like ensaladilla with northern bonito and grated Ávila egg, Montellano 'El Elegido' acorn-fed ham, lamb sweetbreads with garlic glaze and kimchi, creamy ham croquettes with amontillado, and a 'v2.0' wrapped tortilla. Mains take in seasonal vegetables, bacalao al ajoarriero, txangurro gratinado, black-belly monkfish and venison.

Vegetables, Fish and Game

The vegetable section is more than a side show: braised leek with old-style mustard and pickled aubergine, confit artichokes with amontillado and ibérico, white asparagus with goose foie in oloroso, and intensely roasted red peppers. From the sea there's a carpaccio of monkfish, spider crab and sea urchin, chipirones with roast-garlic cream, octopus à feira, monkfish by the half or whole and a 1.2 kg wild turbot for up to three, roasted and served with an emulsion of its own collagen. Meat brings venison tartare with trout roe on brioche, stalked venison loin, Montellano presa and a 50-day-aged vaca vieja chop by the kilo.

Practicalities

Kaldea opens for lunch and dinner Wednesday to Saturday, lunch only on Tuesday and Sunday, and is closed Mondays. Book online through the website or call 633 35 09 49; booking is recommended for dinner. There are separate wine and cocktail lists.
