The Story

Entre suspiro y suspiro opened in 1993 on Plaza de la Marina Española, a small, elegant room with paintings by Mexican artists on the walls and tequila bottles of every shape around them. The Castañeda family, who own it, later moved to larger premises, an old mansion by Plaza de Ópera on Calle Caños del Peral, without losing the eye for detail. Their own telling is a family one: grandparents who left home and crossed the sea, and a family tree now transplanted back to bear new fruit, a cooking of two worlds. It carries a Recomendado listing in the Guía Repsol.

The Cuisine

Mexican haute cuisine rooted in popular recipes but refined, with no folkloric clichés. The carta is split into Los Secretos (starters), Los Suspiros (tacos and panuchos, two to a plate), Los de Siempre (mains) and desserts, with cocktails and a huge agave collection given equal billing, alongside a Spanish-leaning wine list.

Secretos and Suspiros

Starters include the family-recipe guacamole with corn totopos, a white-fish ceviche with ají amarillo, shrimp chicharrón with guajillo, sopa azteca, provolone baked in salsa divorciada, huitlacoche quesadillas and a nopal salad. Tacos run €8.50 to €12: seasonal vegetables, Baja-style battered fish with chipotle mayo, octopus with butter and citrus, chicken tinga, al pastor with pineapple, norteños of pork, beef and chicharrón, pork belly Castakán, Ibérico secreto with pasilla chilli, and Michoacán-style Ibérico cheek. There are panuchos of lamb in chilli adobo, and pre-Hispanic dishes of grasshoppers or chinicuil worms and escamoles, ant larvae in brown butter.

Los de Siempre

Mains, around €17 to €24, include a vegetarian tortilla lasagne, pescado a la talla, prawns al ángel, a la diabla and 'rey' on red onion cured in hibiscus, manchamanteles pork from Laura Esquivel's recipe with chillies, cumin, pineapple and cinnamon, Yucatán cochinita pibil in achiote and orange with xnipec onion, Ibérico pork sirloin with mango, mustard and tamarind or with Doña Lidia's mole poblano, a huarache of beef on fried masa, and a sliced ribeye served with seven salts of Mexican herbs, flowers and chillies. Desserts include a mango and soursop mousse, a chile de árbol chocolate cake and a tequila tangerine sorbet.

Tequila and Cocktails

The tequila bar is closer to a museum of agave, with more than 1,500 bottles of tequila and mezcal, which the house calls the largest collection in Europe. Margaritas run to more than a dozen flavours, from tamarind and hibiscus to jalapeño with rose petal, alongside mezcalitas, a mezcal Patada de Mula with ginger beer, the habanero-spiked Nahual, micheladas and Mexican beers, and aguas frescas of hibiscus, tamarind and guava. A €28 set menu with a craft beer is available for couples or even-numbered groups.

The Team

The Castañeda family owns the restaurant, and Adrián Castañeda has been its maître from the start, guiding diners through the menu and the tequilas.
