Pury, or Pury Jokbal, is a nine-table Korean restaurant on Calle de las Veneras, beside the Mercado de los Mostenses near Plaza de España, opened in August 2024 by Jinwon Yoon. The short carta is built around two Korean pork classics, jokbal (slow-cooked trotter) and bossam (boiled pork belly), served with banchan, lettuce for wrapping and soups, plus kimchi dishes and Korean beer, makgeolli and soju.

About Pury
The Story
Owner Jinwon Yoon came to Spain with his parents about 25 years ago, as a child. His first restaurant served Korean street food, but with a huge menu, a tiny kitchen and big crowds he felt overwhelmed, so he sold it, took a year off and planned something more focused. The result, opened in August 2024, was Pury: a short, carefully worked carta that does a few things well. Korean customers came first; then, the owner says, food lovers and influencers started posting about it, and word spread quickly.
The Cuisine
Korean, focused on jokbal and bossam, the boiled pork trotter and pork belly Koreans order for gatherings with friends and family, with kimchi in several forms and a handful of rice and noodle dishes.
Jokbal, Bossam and Banchan
The trotter is cooked for at least two hours in a vegetable broth scented with a long list of spices, so the flavour goes deep and the meat turns tender; the pork belly is simmered more briefly in a separate broth. As the owner points out, Koreans eat their pork knuckle boiled rather than roasted. Both come with dipping sauces of salted shrimp and soy, three banchan (pickled onion, sesame cabbage salad and radish kimchi), fresh lettuce for ssam wraps, a soybean soup and a second broth to clean the palate. You can order them on their own or as a half-and-half 'banban' plate. Elsewhere on the carta are kimchi fried rice, cold bibim makguksu noodles and jumeokbap rice balls with flying-fish roe, with an individual menu and sharing menus for two to four.
