The Cuisine
Traditional Spanish cooking reworked with a current eye, from tapas to a charcoal grill and a wood-fired oven.
The Carta
Starters include Iberian ham with tomato toast (€23), the chef's croquetas of Iberian ham or spicy chorizo at €2.50 each, a roasted-tomato salmorejo with burrata, huevos rotos with garlic prawns, charcoal-roasted vegetables with ventresca, callos a la madrileña (€14) and an ensaladilla with pickled mussels. The sandwiches come with a side: a crispy baby-squid brioche, a mollete of pig's ear with brava sauce, and a dry-aged beef burger with Miraflores sheep's cheese and truffle mayo (€17). Mains come off the charcoal grill: veal chop with chimichurri, skirt steak, octopus (€27) and turbot (€28).
