El Talgo Bar is a neighbourhood taberna on Calle del Alcalde Sainz de Baranda, in the Ibiza barrio of Retiro, opened in May 2018 by a couple in what was the Zapatería El Talgo shoe shop from 1951. The menu changes with the season and the team's ideas, from an octopus-topped tortilla and red tuna tartare to gildas and a caramelised torrija. It won a LITO award from Hostelería Madrid in 2025.

About El Talgo Bar
The Story
El Talgo Bar is the project of a couple who, after years working for others, opened their own place in 2018. They found a space with history: from 1951 it had been the Zapatería El Talgo, one of the area's known shoe shops, and when they found an old photo they decided to keep the name and its style. After six weeks of work they opened on 25 May 2018. In 2025 the bar received a LITO award from the Hostelería Madrid association.
The Cuisine
Seasonal, creative taberna cooking that moves between neighbourhood tapas and more elaborate plates: an octopus-topped tortilla with alioli, red tuna tartare over avocado and tomato, salmorejo with ham and egg, gildas of anchovy or boquerón, braised meats, and desserts like a caramelised torrija with ice cream, a limited edition around Easter.
