About Caiño

The Story

Caiño opened in 2023 at Calle de Ibiza 35, on the residential side of the Retiro, taking over the premises of the wine bar El Marginal. It belongs to bulbiza, a small group on the Ibiza boulevard that also runs La Cocina de Frente, Bistronómika, Casa Julián de Tolosa and the breakfast spot Maison Glacée. The group's director, Carmen González-Llanos, is a journalist by training with a passion for wine. Caíño is also the name of a native Galician red grape. The bar holds a Solete in the Guía Repsol and picked up a mention in the 2025 Premios Metrópoli for best tapas bar.

The Cuisine

The kitchen works a dynamic carta for picking at, bites to go with the wine rather than a full sit-down meal. The dishes that come up most in diners' reviews are the burger, the tortilla, the croquetas, the ensaladilla and the anchovies, and there's a cheese board. The wine list is the other half of the story: natural wine first, with cavas and champagne alongside.

The Team

Oenologist Lucía Araque runs the floor and the wine. She came to wine almost by accident and worked at El Marginal, the bar that held these premises before. The opening chef was Carlos García, a Madrileño who had run the kitchen at the group's La Cocina de Frente since 2020.
