Chiang Ju
Chiang Ju (江湖·重庆菜) is a Chongqing restaurant on Calle de Silva, just off Callao. The kitchen cooks the street-style 'jianghu' food of Chongqing and Sichuan: flash-fried meats with chilli and Sichuan pepper, mao xue wang, sea bass in a broth of jar-fermented vegetables, and twice-cooked ribs with potatoes. It opens from noon without a break, every day except Wednesday.

Background
About Chiang Ju
The Story
Chiang Ju takes its name from jianghu (江湖), and bills itself as Chongqing cuisine: the punchy, chilli-and-Sichuan-pepper cooking of south-west China, served on Calle de Silva. Its own posts are written in both Chinese and Spanish.
The Cuisine
Chongqing and Sichuan cooking: high-heat stir-fries, numbing Sichuan pepper, slow-fermented vegetables and offal-rich hotpot-style stews, alongside milder Chinese classics such as sweet-and-sour ribs.
What comes out of the kitchen
The house posts give a good picture. There's Chongqing-style mao xue wang loaded with pork blood, tripe, beef, prawns and squid under hot chilli oil; rabbit flash-fried jianghu-style with Sichuan pepper; sea bass in a golden broth of vegetables fermented slowly in old jars; ribs braised, fried and then stir-fried with potatoes; and chicken thigh buried in dried chillies and peppercorns. Milder plates include sweet-and-sour pork ribs, black-pepper beef with broccoli and corn, and soft tofu in salted egg-yolk sauce.

It's at Calle de Silva 25 in the Universidad barrio of Centro, a few minutes' walk from Callao metro (L3/L5).
Nearby
Universidad is the student-facing edge of the centre, young and busy and cheap in places, ambitious in others. The eating shifts block by block, from taverns pouring vermut to kitchens doing genuinely contemporary cooking. It runs into Malasaña and Gran Vía, and the mood changes with it.
