About Cervecería Acorde
The Story
Acorde is the newer venture of chef Álex Marugán, who runs Tres por Cuatro and Pacto Raíz, with siblings Paz and José Antonio Aparicio as partners. It's an ode to the bars of a lifetime, with well-poured cañas, cured meats, tins of conservas and raciones, and even a porrón you can fill with wine or beer, a habit Marugán wants to bring back. 'Everything comes back,' he says: Madrid is returning to stews, spoon dishes and the soup tureen on the table.
The Cuisine
Traditional bar cooking done with a restaurant kitchen. Gildas are made in house, anchovy and boquerón plus one that changes monthly, alongside smoked sardines with salmorejo, navajas dressed in a garlic-and-vinegar emulsion of their own oil, and boards of ibérico, Formaje cheeses and tuna mojama. Fried fish is done the Andalusian way (tortillitas de camarones, cazón en adobo), and the guisos are callos with pata y morro and garbanzos con oreja.
The Carta
Most dishes come as a half or full ración. Croquetas de jamón are €11/€16, torreznos with pico de gallo €9/€14, piquillo-style peppers stuffed with salt-cod brandada €16/€24 and cazón €11/€18. There's a 'tortilla vaga' with garlic prawns and papada (€17.50), fried eggs with glass shrimp, and the 'bocadillo del 12' of chicharrón, cheese, mustard, guajillo mayonnaise and escarole (€8). Mains run from presa ibérica (€27) and lamb chops (€28) to aged beef loin (€39.50) and a roast sapito (monkfish) with baked potatoes for two (€45). Desserts include a cheese flan and Asturian-style rice pudding.
Before a Concert
Almost the whole carta is served straight through the afternoon, which makes it a natural stop before a show at the Movistar Arena, but the guisos (callos and garbanzos) aren't available between 16:00 and 20:00, and the kitchen closes at 23:00. To drink there are around 70 wines, with sherries and sparkling wines alongside the usual reds and whites, and the porrón.
Practicalities
Open Wednesday to Saturday 13:00 to 23:30 and Sunday 13:00 to 16:30, closed Monday and Tuesday. Book through TheFork from the website or call 914 21 36 74; you can also just turn up for a caña and a gilda at the bar.
