It's billed as international, but the cooking leans traditional and ingredient-led, the sort where what's good that week decides the plate. The carta is short and printed daily, with suggestions that change with the market.

The Story

Quinqué was opened in 2019 near Plaza de Castilla by chefs Carlos Griffo and Miguel Ángel García, both with long experience in top kitchens including Casa Marcial. It began as a place for 'comida de casa', home cooking built on seasonal produce in an updated form that respects its full flavour, and since mid-2025 it has moved towards more elevated cooking, from an eatery to a contemporary bistro, with traditional market cooking still at its base. It holds a Michelin Bib Gourmand and is recommended by the Guía Repsol.

The Croqueta That Won Madrid Fusión

In January 2024 Griffo and García won the tenth edition of Madrid Fusión's championship for the best Ibérico ham croquette, run with the ham house Sánchez Romero Carvajal, from a record field of more than 70 recipes. The jury was led by Pedro Subijana of Akelarre, and Tres por Cuatro from Madrid was among the other finalists.

Griffo has explained the method: fresh cow's milk infused with the ham bones, a béchamel made with olive oil, butter, chopped ham, flour and that infused milk, the ham cut small enough to taste and feel, and every croquette shaped by hand, one at a time. It had been the house calling card from the first months; even in 2019 the croquettes were being talked about among the best in Madrid.

The Cooking

The carta is short, printed daily and driven by the market, with suggestions that change with what's good that week. The house is known for its Ibérico ham croquettes, named the best in Spain at Madrid Fusión 2024, for its escabeches and for pigeon rice with trumpet mushrooms. There is also a tasting menu of eleven courses at €75, with a wine pairing for €35 more.

In its first years the few fixed dishes were the croquettes, a hake tortilla, the cheesecake and spoon dishes such as verdinas, with a strong Asturian thread from the pair's time at Casa Marcial: fabada, pochas, verdinas with cockles, rice with pitu chicken and escabeche partridge, much of it available as half portions. Desserts ran to an American-style cheesecake, a rice pudding with a burnt top and apple tarte tatin.

The Room

Quinqué is small, with a bar and a flexible little dining room, and it has the look of a French bistro: dressed tables and candlelight, with homely cooking behind it. It sits in a busy business district near Plaza de Castilla, which makes it a natural lunch stop for the offices around it.

The Team

Carlos Griffo counts Nacho Manzano of Casa Marcial, the Asturian two-star, as his biggest inspiration, and has also cooked at Quique Dacosta in Dénia, at StreetXO under Dabiz Muñoz and at Dani García's BiBo in Madrid, where he was head chef for three years and met his partner Miguel Ángel García. The two opened Quinqué together in 2019, and they won Best Croqueta de Jamón Ibérico at Madrid Fusión in 2024.
