About Ático
The Story
Ático is the restaurant and terrace on the sixth floor of The Principal Madrid, the hotel at Marqués de Valdeiglesias 1, on the corner with Gran Vía 2. It began as Ático by Ramón Freixa and today calls itself an urban bistro with a terrace: seasonal dishes with clear, familiar flavours, served with views over the spires of the city's grand buildings and down the boulevard. It's listed in the Guía Repsol.
The Cuisine
Creative Spanish and Mediterranean, leaning on seasonal produce, with a large wine list. Dishes the hotel highlights include a mushroom and parmesan risotto and oxtail meatballs. In summer 2025 chef Víctor Cuevas cooked a seven-pass tasting menu at €120.
The Summer Tasting Menu
That 2025 menu gives a sense of the kitchen's range: an oyster tartare with caviar and ginger, a payoyo cheese ninoyaki with cured cecina, Ibérico jowl and carabinero wrapped in shiso, a light white asparagus cream with scallop and salmon roe, a farm egg yolk with celeriac and seasonal mushrooms, glazed Balfegó tuna belly with a citrus picada and herbs from the hotel's own urban garden, and roast roe deer with port sauce and cauliflower. The pairing was three wines and two signature cocktails from head bartender Daniel Cruz, one with Madrid gin, kaffir-lime cordial and basil.
Terrace and Cocktails
The terraces are the draw: a place for a cocktail, music and some of the widest views in the city, looking down the top of Gran Vía. A private terrace can be booked for two to fourteen people with 72 hours' notice and a minimum spend. Indoors, the dining room is intimate and elegant, and it hosts private lunches, dinners and events.
