The Story
The madrileño Repullo Hernández family founded La Andaluza shortly before the Spanish Civil War, and three generations ran it until 2005, when they sold to a long-time employee, the churrero Javier Mata Serna, who still owns it. He's modernised the workshop while keeping the recipes, and says the business now employs eleven people.
