Background

About Tejada Mar

The Story

Tejada Mar is the beachfront restaurant from chef Romain Fornell, born in Toulouse in 1976 and trained under Michel Sarran and Alain Ducasse. In 2001, at age 24, he became the youngest chef in Europe to earn a Michelin star at his restaurant Chaldette in France. He moved to Barcelona and opened Caelis in 2004, earning a Michelin star in 2005 -- the only French chef to hold stars in both France and Spain. With associate Hugues de Montfalcon, he founded the Gout Rouge group, which now encompasses around nine restaurants in Spain and three in France. Tejada Mar is the marine counterpart of Casa Tejada.

The Cuisine

The kitchen serves Mediterranean bistrot cuisine centred on seafood, oysters, rice dishes, and tapas. Signature dishes include N3 oysters, Balfegó tuna carpaccio, Harry's Bar carpaccio, bluefin tuna tartare with soy and lemon, Robuchon crayfish with kimchi mayonnaise, linguini al vongole, pasta with lobster, charcoal-grilled sea bass Basque style, grilled octopus with pico de gallo and hummus, grilled entrecôte with café de Paris sauce, and paellas of prawn and clam, squid and scallop, or Iberian pork. Around 50 EUR per person a la carte without drinks.

The Team

Executive chef-owner Romain Fornell oversees the concept and menu. Head chef Luca Pinna leads the Tejada Mar kitchen day-to-day.
