Señora Dolores
Señora Dolores
Señora Dolores (Sra. Dolores) is a 2023 Sant Antoni tapas bar from chef Mathieu Pérez, who spent five years as head chef at Bar Brutal before going independent.
Background
About Señora Dolores
The Story
Señora Dolores opened in mid-2023 on Carrer del Marquès de Campo Sagrado in the heart of Sant Antoni. The restaurant introduces itself simply: 'Bar de tapas y vinos naturales' - a tapas bar built around natural wines. The concept is chef Mathieu Pérez's, who spent five years as head chef at Bar Brutal before leaving to start his own project. Before Bar Brutal, Pérez co-owned Au Deux Amis bistro in Paris (Fooding Guide 2010 award) and ran the Percheron restaurant in Ceret (French Catalonia), a natural wine pioneer. Señora Dolores is his return to Barcelona as a chef-owner. The name pays homage to Dolores Ibárruri 'La Pasionaria' and other left-wing and feminist icons named Dolores, with images of ten 'fighting women' decorating the space. The idea is deliberately tight: a small snack bar organised around the balance of fried and raw dishes, with a rotating menu that changes weekly.
The Cuisine
The kitchen is 'fritura al estilo de churrería' - churro-shop-style frying - paired with raw preparations to balance the meal. The fried half of the menu spans lasaña frita, arancini, albóndigas, patata churros and rotating items drawn from different culinary cultures that share the common technique. The raw half features tartares, carpaccios, seasonal crudo and conservas, with ingredients sourced from 'artesanos que trabajan la tierra con un gran respeto' (small artisan producers). The restaurant recommends trying the full menu split between both sides - each week there are new recipes, so the fried-half in particular rotates constantly. Around €20-30 per person.
The Team
Chef-owner Mathieu Pérez is from Perpignan and spent five years as head chef at Bar Brutal before opening Señora Dolores in 2023. Before Barcelona, he co-owned Au Deux Amis bistro in Paris (Fooding Guide 2010 award) and led the Percheron restaurant in Ceret, a natural wine pioneer in French Catalonia. The restaurant is small and Pérez runs the kitchen day-to-day. The service style is unhurried and wine-forward, suited to the small-plates-and-a-glass format.

Señora Dolores opened in 2023 in Sant Antoni by chef Mathieu Pérez, who spent five years as head chef at Bar Brutal before going independent. The restaurant's own framing is 'Bar de tapas y vinos naturales' - a tapas bar organised around natural wines from small artisan producers within about 200km of Barcelona, with the food menu split between fried ('al estilo de churrería') and raw preparations, rotating weekly. TimeOut Barcelona awarded it 5/5 stars. Also featured in The Infatuation, Ara and Barcelona Food Experience. Note: Google rating (3.9/5) was deliberately lowered by the chef's own protest campaign against Google's review system.

Experience
Señora Dolores Dining Experience
The dining room is small, tiled, lit warm, with a long bar and a couple of tables in the back. The energy is classic natural-wine-bar: unhurried, bottle-forward, bar-first. Regulars come for the wine list, stay for the frituras and the conversation. The churro-shop-style frying technique is the kitchen signature - you're expected to share a few small plates from the rotating fried half and a few from the raw half to balance the meal.

What should I order at Señora Dolores?
+
Split your order between the two halves of the menu. From the fried side, try the lasaña frita, arancini, albóndigas and patata churros - plus whatever rotating special the kitchen is running that week (the fried half changes weekly). From the raw side, order a tartare or carpaccio and a conserva. Pair with a glass from the natural wine list. The current full menu is published on the restaurant's Google Business profile rather than the website.
Is Señora Dolores a natural wine bar?
+
Yes. Natural wine is central to the concept. The list is built around 'vinos de pages conscientes' (conscious small-scale winemakers), drawn mostly from producers within about 200km of Barcelona, plus select bottles from further afield that share the same philosophy of respectful farming and minimal intervention. Wines are paired with the kitchen's split fried/raw menu and rotate as the stock changes.
