About Bar Brutal

The Story

Bar Brutal opened in 2013 inside Can Cisa, a family wine cellar that had operated on Carrer de la Princesa since 1949. Venetian twins Max and Stefano Colombo, together with partners Joan Valencia and Joan Ramón Escoda, transformed the old shop into one of Barcelona's first dedicated natural wine bistros. More than a decade later, it remains a touchstone for the city's natural wine scene, spread across two connected spaces in the heart of El Born.

The Cuisine

The short, frequently rewritten menu leans on seasonal produce and brings a Veneto accent to Mediterranean cooking: carefully chosen cheeses and cold cuts, fresh oysters, marinated sardines, and a handful of warm plates designed to share. Dishes change with availability, and the kitchen keeps vegetarian, fish, seafood and meat options on the list at all times. The wine cellar holds roughly 2,000 references, heavily weighted toward organic, biodynamic and low-intervention producers.

The Team

Brothers Max and Stefano Colombo lead the project together with wine partner Joan Ramón Escoda, supported by a team of sommeliers trained to read the room and match bottles to each table's mood and experience level. The kitchen works without a publicly named head chef, treating every plate as a collective effort tied to the day's market.
