Gilda by Belgium is a Belgian-owned, Brazilian-led fusion tapas kitchen on Carrer Ample in the Gothic Quarter, splitting its menu between Catalan-leaning vegetarian tapas and Flemish mains.

Background

About Gilda

The Story

Gilda by Belgium occupies a Gothic Quarter dining room on Carrer Ample run by a Belgian businessman with a Brazilian chef. The project pairs Catalan ingredients with Flemish cooking traditions, giving a market-stall menu a Low-Countries twist. Local and visiting diners share the space alongside contemporary art that rotates on the walls, including pieces from Barcelona-based street artist Riccardo Lopez.

The Cuisine

The kitchen splits the menu into Tapas and Main Courses. Tapas lean vegetarian, meat and fish in roughly equal measure, taking in Bravas Gilda with a cinnamon-and-coffee tomato sauce, pa amb tomàquet on Baluard Barceloneta bread, artisan croquettes with Belgian Oud Brugge cheese and a Syrian Zahra Mekleyah cauliflower with tahini. Main courses turn Belgian: Stoofvlees beef stew cooked in Westmalle Double and Kwak beers, Belgian Steak-Frites with a choice of green-pepper Cognac, mushroom Archiduc or French blue-cheese sauce, and Moules-Frites served Marinière, Thai or 'Formidable'. French duck magret, New Zealand rack of lamb with tandoori-masala purée, Norwegian salmon with wasabi ice cream and a sesame-seared tuna tataki round out the range.

The Team

The venue is Belgian-owned, with a Brazilian chef running the kitchen. The team sources Catalan bread from Baluard Barceloneta, cheeses from Catalunya, France and the rest of Europe, Iberian ham from the Pedroches Valley in Córdoba and Belgian beers that drive the stews and the bar.
