Fonda Bullanga is a 21st-century take on the traditional Barcelona fonda, opened by chef-owner Roger Sanchez Amat in a historic neighbourhood space (the former Novecento restaurant) on Carrer de la Diputacio. The name has three references: the bubbling of cooking pots ('bullir l'olla'), the 19th-century Barcelona popular uprisings called 'Bullangues', and the Majorcan folk song 'Bullanguera'. Roger's cooking is inspired by his grandmother Jordina's Pyrenean recipes and his godmother Margalida's Majorcan recipes. He also runs fondesdesisos.cat, a digital project documenting 19th-century Barcelona popular inns.
