The Story

Cerveceria Seis Cuarenta opened in December 2025, founded by chef Eugeni de Diego, who spent approximately 10 years at elBulli under Ferran Adria, eventually serving as head chef. After elBulli, de Diego coordinated Bullipedia and helped open nearly all of Albert Adria's Barcelona restaurants. He then opened Apluma (sold at its peak), Bar Lombo, and Colmado Wilmot under his company Atico Estudio Creativo. The name 640 has a double meaning: the street number on Diagonal and the ratio of the house beer (60% Estrella Damm, 40% Turia).

Chef-owner Eugeni de Diego leads a kitchen serving elevated cerveceria cuisine with classic tapas prepared with haute-cuisine technique. The menu spans breakfast through late dinner with non-stop service. Signature plates include steak tartare with Parmigiano, macarrones de ibericos, the cubanito 6/40 on brioche, a tortilla and calamari called out by critics, and natilla con galleta Maria for dessert.
