The Story

Colmado Wilmot opened in March 2023, created by chef Eugeni de Diego and his wife Ana Alvarado. Eugeni served as head chef at elBulli from 2005 to 2011, called to the position by Ferran Adria himself. After elBulli closed, he became the consigliere of Albert Adria, helping launch Bodega 1900, Pakta, and Tickets. The name Wilmot is an homage to John Wilmot, Earl of Rochester, the 17th-century English libertine poet. The concept combines a retro colmado (grocery shop) with a tavern serving classic Catalan guisos.

The Cuisine

Chef Eugeni de Diego applies his elBulli and Adria pedigree to traditional Catalan market cooking -- guisos, casseroles, and seasonal market dishes. Signatures include potato tortilla with garlic prawns, Stroganov meatballs, callos with potato tortilla, capipota, fricando with sea cucumbers, and cardinal macaroni. The menu features half-portion options for trying multiple dishes. Around 120 wine references are available by the glass. Everything is ingredient-led and seasonal.

Chef Eugeni de Diego brings an extraordinary CV -- elBulli head chef (2005-2011), co-creator of Bodega 1900, Pakta, and Tickets with the Adria brothers, and later work at elBullifoundation. His wife Ana Alvarado, whom he met at elBulli, co-runs the business. Service follows the casual, no-frills approach of a neighbourhood colmado rather than fine dining formality.
