The Cuisine

The kitchen serves authentic Catalan market cuisine with a short, focused menu that changes with the seasons. Head chef Eloy Bayarri, formerly sous chef at Coure under Albert Ventura, leads a kitchen that emphasises slow-cooked dishes ('platos de chup-chup'), fresh salads, excellent macarrones in various versions, bocatas, and sharing plates for picoteo. The approach is ingredient-led and unpretentious, with a focus on quality over complexity.

Owner Joan Martinez ('Juanito') is a key figure in Barcelona's gastrobar history, having co-founded Inopia with Albert Adria and later Lolita Taperia. AÜC is a collaborative project between Martinez and chef Takeshi Somekawa (head chef at Dos Palillos).
