Career

After Inopia, Martínez ran Lolita Bar as owner — the successor restaurant that operated for years in Barcelona. He later joined chef Eloy Bayarri (ex-right-hand at Albert Ventura's Coure) to open Aüc Bar, the Catalan tapas project in a quiet plaza in Sant Gervasi. The wider Aüc team includes Santhosh Kumar (ex-Dos Palillos) and Mónica Gilède (ex-Lolita Taperia). At Aüc, Martínez serves as restaurateur, director, and floor — bringing decades of Barcelona gastrobar experience to the project. The restaurant is in the Michelin Guide selection.
