The Story
Trobar is a three-level bar, restaurant, art gallery and shop on Carrer de l'Agulla in Cala Ratjada, on Mallorca's northeastern coast. It was opened in September 2023 by Dolli Taylor, an Australian former fashion publicist, and her partner Fabio Donghi. Taylor had already built an online art-collecting project called Trobat, born out of buying and sharing small artworks on social media during the pandemic; she found the derelict building that became Trobar while driving through the neighbourhood, and its owner, who had been to one of her pop-up art events, backed the idea. The name Trobar means 'to find' in Catalan, and the space is built around that idea: a ground-floor restaurant, a rooftop terrace used for dinner, and an underground cocktail bar called trobasement, all doubling as a gallery and shop for contemporary art and artist-made objects.
The Cuisine
Trobar doesn't run a single fixed kitchen. Instead it hosts a rotating program of chef residencies, with a different chef, and an entirely new small-plates menu, taking over roughly every 2 to 4 weeks. Dishes are sized for sharing, and the cups, plates and glassware used on the table are made by artists represented through Trobar's sister project, trobat.co. Coverage of the restaurant at different points has described the food as Italian-inspired and, on other visits, leaning on Central and South American flavours, which fits a kitchen where the style follows whichever chef is in residence rather than one house cuisine.

The Team
Trobar was founded by Dolli Taylor, who spent over a decade in fashion PR (including work on Australian Fashion Week and with brands such as Calvin Klein and Tommy Hilfiger) before moving to Mallorca in 2019, and her partner Fabio Donghi, an Italian entrepreneur whose production company had also worked on Australian Fashion Week; the two met in 2018 at a wedding in Italy. The kitchen itself is led by a rotating cast of visiting chefs rather than one resident head chef; the residency running in July 2026 is cooked by Marle Rudolph, a Hamburg-based chef with a background in nutritional science and gastronomic sciences.

Booking
