The Story
Aromata is Andreu Genestra's more relaxed Palma project, and the casual counterpart to his Michelin-starred eponymous restaurant on the island. It first opened in 2014 in the courtyard of the Centre de Cultura de Sa Nostra, where it picked up a Repsol Sol. After roughly a decade there, the restaurant moved in late 2024 to the ground floor of the HM Palma Blanc hotel on Carrer Ramón y Cajal, in central Palma. The idea, in Genestra's own framing, is to bring high-end Mallorcan cooking to a wider audience at gentler prices than a tasting-menu temple. The Michelin Guide lists Aromata as a Selected restaurant, and Repsol gives it 1 Sol.
The Cuisine
The cooking is contemporary Mallorcan, built around the best local Balearic ingredients available on the day. The format flexes by service: a midday menu plus à la carte at lunch, and in the evening a choice of tasting menus alongside the carte. Repsol names Aromata's tasting routes as the Aromata and Sentits menus, with a vegetarian Verd option also offered.
