What "specialty coffee" means here

In Palma, specialty coffee splits two ways: cafés pouring beans from a named outside roaster, like Madrid's Hola Coffee at Bacán, Barcelona's Nomad at Menut Cafè or Amsterdam's Lot61 at Batx, and homegrown roasters doing their own sourcing and roasting on the island, like Mistral Coffee and Hotto Coffee Lab. Many of these cafés pair coffee with a brunch or bakery menu rather than running as coffee-only bars, so expect food on the menu, not just an espresso counter, at most stops on this list.
