The Story
Hotto Coffee Lab was opened by Felipe Vessena and Tatiana Weiman, the founders of Surry Hills, the Australian-brunch specialty coffee café nearby on Carrer del Carme. Where Surry Hills leans Australian, Hotto is built around Japan: the venue roasts single-origin coffee on-site and from guest roasters, pours ceremonial matcha sourced from Uji, and serves a brunch menu of shokupan-bread sandos, toast and a brioche breakfast bun. Surry Hills itself traces back to Buenos Aires in spring 2019, inspired by Sydney's Surry Hills neighbourhood, before expanding to Palma. Hotto also runs small-group barista workshops covering espresso, filter methods and latte art.
