About Ronda 14
The Story
Ronda 14 began in Avilés in 2011, when chef Mario Céspedes and Conchi Álvarez set out to fuse Asturian cooking with Peruvian nikkei, well before ceviche needed no explanation in Spain. The first carta was a negotiation with a public raised on cachopos: morcilla, foie and anchovies sat beside the sushi, ceviches and tiraditos as a way in, and the team gave away little tastes of ceviche with a glass of wine to win people over. In 2015 they opened this Madrid room on Calle General Oráa, which marked ten years in 2025. The group has since added Cilindro, a sanguchería called Apura and a Ronda 14 in Pozuelo de Alarcón. It's listed in the Guía Repsol.
The Cuisine
Nikkei (the Japanese-Peruvian fusion that came out of Japanese immigration to Peru), with an Asturian thread running through it. The venue's site lists gyozas, baos, tiraditos and sushi, alongside Asturian stews lifted with Peruvian ají amarillo.
How the Carta Has Changed
Over the years the more conventional dishes that helped them in have gone, and Céspedes now describes it as nikkei cooking with local produce: Peru as the emotional and technical root, Japan as precision and form, Asturias as produce, memory and heft. The squid and ají limo ceviche is one of his favourites. The mar y montaña roll has been there since the start, the truffled egg gunkan began on a plantain base and moved to nori, the mini wagyu burger swaps wasabi for Asturian-style blue cheese, and the anticucho gyoza with ají limo brings a touch of casquería. The carta keeps renewing in Madrid, with gyozas, baos, tiraditos, rolls, gunkans and ceviches built for sharing.
Group Menus
Two sharing menus run all year. Menú 1, at €50, goes from a huancaína ensaladilla and nikkei ceviche with sweet potato to the mar y montaña and baby squid in ink rolls, a scallop nigiri a la parmesana, anticucho gyozas, the seco de angus with tacu tacu of Asturian fabes, and a chocolate coulant with pineapple ice cream. Menú 2, at €55, swaps in the tiradito with ají amarillo cream and a wagyu nigiri and ends with blue-cheese cheesecake. Both include bread, water, coffee and Rioja or Rueda wine. On Thursday, Friday and Saturday evenings the 20:45 sitting has to leave the table at 22:15 for the second turn.

The Team
Mario Céspedes is a Peruvian chef trained between Lima and Spain, who was barely over 25 when the first carta started in Asturias; Conchi Álvarez, his partner, runs the room. They briefly centralised stocks and stews in a group R&D kitchen, then went back to cooking every day in each restaurant, and they talk about controlled rather than massive growth.
