Cilindro is the second Madrid restaurant of Lima-born chef Mario Céspedes and Conchi Álvarez, opened in 2018 on Calle Don Ramón de la Cruz in Lista, three years after their Ronda 14. The cooking is Peruvian, more criollo than nikkei, crossed with Asturian produce and built around a wood-fired 'cilindro' oven, with ceviches, piqueos, Peruvian pollo a la brasa and a strong cocktail list. It's listed in the Guía Repsol.

About Cilindro

The Story

Chef Mario Céspedes and Conchi Álvarez opened Cilindro in 2018, three years after bringing their Avilés restaurant Ronda 14 to Madrid. Where Ronda 14 leans nikkei, Cilindro takes Peru's criollo cooking as its axis. The name comes from the cilindro, the traditional wood-fired drum oven used in Peru to smoke and braise meat and fish; a modern version is the engine of this kitchen. The group has since opened Picona, a traditional tasca on Calle del General Oráa. It's listed in the Guía Repsol.

The Cuisine

Peruvian with a fusión bent, in a room set up for groups and with cocktails a strength. There's a dedicated Carta de Pollos built around pollo a la brasa.

The Carta

The cooking rests on house sauces and reductions and on dishes done 'al cilindro'. Ceviches and tiraditos include a tiradito with cheese sauce and roast plantain, a green ceviche with huacatay and mango, a ceviche with rocoto cream and avocado, and a causa with fried fish. The piqueos, many available as half portions, run from a nikkei sudado of sea bream, lomo saltado of sirloin and an Asturian roll with a chifa stew to prawn gyozas, cachopinos of beef with goat's cheese and mushrooms, a bluefin tuna nacho, braised-cheek bao, anticucho gyozas, ají de pollo with creamy coconut rice, and chancho al cilindro with roast potatoes, ají amarillo and huacatay.

Pollo a la Brasa and Cocktails

Peruvian roast chicken has its own carta: marinated for hours in the house recipe and roasted slowly for crisp skin, served whole, half or quarter with chips, salad and the house sauces, or as a Mostrito with chaufa rice. It's also available to take away or for delivery. The cocktails are a real strength, from a classic pisco sour and a maracuyá sour to the house Chilcano with pisco, cachaça, purple corn, pineapple and ginger, a spicy Chingón with rocoto foam, a Mojito with huacatay and kombucha, and a Tommy's Margarita with mezcal and tamarind. Desserts include a blue-cheese cheesecake with red-berry ice cream and a chocolate coulant with pineapple ice cream.

The Team

Mario Céspedes was born in Lima and has been settled in Asturias for more than a decade, a creative cook who ties the food of his childhood to the produce around him now, with refined, balanced technique. He runs Cilindro with his partner Conchi Álvarez, and takes the cooking out to showcooking events and catering for weddings in Madrid and Asturias.
