About Colósimo

The Story

Colósimo brings Cádiz cooking to Calle José Ortega y Gasset, in Lista. Executive chef Ricardo Romero leads the kitchen with head chef Manuel Romero, and the same team runs Menudeo, a casa de comidas across the street. It's listed in the Guía Repsol.

The Cuisine

Gaditano tradition, the food of Cádiz, specialising in slow-fire cooking on seasonal produce, with everything made in house. The short carta is built to share: cold plates such as burrata with pesto or pastel de atún encebollado, then house dishes like croquetas de puchero, boned lamb's trotters with chickpeas, tongue cooked as in Ubrique with tagarninas in oloroso, corvina a la roteña, stuffed squid and a cochinillo terrine, plus its loose-set potato tortilla with onion. Sherry and other vinos generosos are a house speciality.
