The Story
Hevia opened on Calle de Serrano in 1964, founded by Pepe Hevia and Elena Arbizu, and is often called one of Spain's first gastrobars. Three generations on, it's still run by the family.
The Cuisine
The kitchen built its name on gourmet delicatessen, canapés and quality tapas, with signatures like a smoked-fish salad and callos.
Dated Dishes
The February 2026 carta dates some of its classics. The smoked-fish ensaladilla tosta on brioche with egg threads goes back to 1964, as does a king-crab version; the guacamole tosta with anchovies to 1978; the pan-fried foie with PX to 1986; and bonito escabechado in partridge sauce to 2001. The callos a la madrileña are billed as 'Hevia, 62 años', and there's a tortilla with callos too. The house ensaladilla with bonito ventresca is presented as one of Spain's best, and the Iberian acorn-fed ham as a family obsession.
Fish, Meat and Prices
From the sea: Huelva white prawns, Galician baby squid, a grilled 'chop' of Barbate almadraba red tuna (limited), red-tuna tartare, Galician hake, cocochas and a whole wild sole for two (€79). The meats include roast codillo with sauerkraut, breaded sliced sirloin with garlic, steak tartare, lamb brains, rabo de toro and an aged-beef entrecôte. Starters run about €10 to €36 and mains €25 to €39; bread and aperitivo are €3.90, and terrace tables carry a 10% supplement. The wine list opens with DO Vinos de Madrid.
