About Beker 6

The Story

Beker 6 opened in 2013 on Calle de los Hermanos Bécquer, founded by the Rodríguez-Cano family and Álvaro Sainz de Vicuña; Álvaro Rodríguez-Cano calls it a meeting place of two friends for their friends. The family has been in Madrid restaurants since 1986, when it opened Tristana, followed by the Armenian restaurant Sayat Nova in 2004 and Las Cuatro Chimeneas in 2020. In 2022 the Cofradía de la Buena Mesa, the gastronomic society whose 1973 guide became the Guía Campsa and later the Guía Repsol, named it Restaurante del Año in the society's fiftieth year, and it's listed in the Guía Repsol.

The Cuisine

Simple, slow-cooked market cooking, with game at the centre: the kitchen's own description is a cooking of memory, bringing back old dishes and exploring different parts of the world. The carta runs from French bistro classics like escargots bourguignon, frogs' legs provençale, coq au vin, bouillabaisse and skate meunière to wild partridge from Medina Sidonia stuffed with chestnuts, venison ragout with oloroso and juniper, and a chuletón of organic, pasture-raised beef. The Armenian side comes from Álvaro Rodríguez-Cano's roots: hummus with muhammara, baba ganoush and a lamb shish kebab.

Plates of the Day

The carta on the restaurant's site lists a dish for each weekday lunch and some dinners: wood pigeon over stewed potatoes on Monday, verdinas with duck confit on Tuesday, mulligatawny on Wednesday, roast beef with roast-potato purée on Thursday and purrusalda, the Basque leek, potato and salt cod stew, on Friday. In the evenings there have been a French omelette filled with sea-urchin béchamel, steak tartare à l'ancienne and goujonettes of sole. Desserts are home-style: chocolate soufflé, natillas, cuajada with honey from the Montes de Toledo and ice cream made with fresh milk. Other dishes that have been on the table include huevos encapotados, rabas with chilli mayonnaise and a red curry of white fish and clams with jasmine rice.

Cooked to Order

The kitchen will cook things that aren't on the menu if you ask ahead: poularde, homemade foie, game such as roe deer, partridge or mallard, turkey and Asian dishes, and even migas. Fish comes from ports in Asturias, and elvers are made to the diner's taste when in season. Once a month it has run Armenian dinners, a mezze of small plates to share followed by grilled skewers with pilaf rice and a dessert, announced on its social media.

The Space

There are four areas: the bar, the dining room, a private room and the terrace. The bar and terrace have a short list for picking at, with ham and black-truffle croquetas made daily, Joselito acorn-fed ham, the hummus and baba ganoush, and a house-ground burger basted in stout.

Isabel González Tornos runs the kitchen with Álvaro Rodríguez-Cano, and their daughters Aída and Laura Rodríguez-Cano lead the dining room. The team has barely changed since opening: José Manuel and Miguel have been in the room from the start, and Mohammed Ealilouchi, trained in French cooking, works in the kitchen.
