VRRO (pronounced 'bro') is the castizo taberna at Calle Serrano 93 from chefs Jorge Velasco and Joaquín Serrano, the team behind Varra. It opened as Varro, a counter-led home for Varra's best-loved bites, and was relaunched as VRRO in late 2025, adding grilled dishes and a second, much larger site at Paseo de la Castellana 200. It won Best Tapas Bar at the 2024 Premios Metrópoli.

About VRRO

The Story

Varro opened on Calle Serrano as an independent space to celebrate the most popular bites from Varra, the casa de comidas of chefs Jorge Velasco and Joaquín Serrano, with dishes such as the red-prawn toast with semi-salted butter, ensaladilla and Joselito ham croquetas. In late 2025 it was renamed VRRO, with a refreshed identity, a grill-led addition to the menu and a second, much larger VRRO in the NUGA Castellana space at Paseo de la Castellana 200.

The Cuisine

Castizo tapas with a modern touch: tortilla pinchos, gildas, croquetas and bravas, then grilled and seasonal plates from Tudela artichokes to aged-beef steak tartare.

What to Order

Tortilla is the house signature, made with free-range eggs and sold by the pincho without onion, with onion, with goat's cheese and caramelised onion, or with truffle. Around it sit a dressed Santoña gilda, the prawn toast with semi-salted butter, Ibérico de bellota ham croquetas, a bikini of Galician lacón with smoked cheese and truffle, a crisp croissant of almadraba tuna tartare, the house bravas and an ensaladilla made daily with bonito and piparras. Larger plates include Soria torreznos with brava sauce, zamburiñas with kimchi mayo, roast leek with romesco and hazelnuts, fried Tudela artichokes with Idiazábal and truffle, glazed Navarra chistorra, hook-caught baby squid, aged-beef meatballs in Périgord sauce, 40-day aged picaña tartare and garlic beef sirloin. Desserts are cheesecake, chocolate tart and a caramelised torrija with Lotus.

VRRO Castellana

The second VRRO, at Paseo de la Castellana 200 in Chamartín, is far bigger and opens earlier, with a breakfast menu of tortilla, sourdough toasts and pastries. It has a dome room, a salon and a large terrace, and takes corporate and private events, from sharing menus and coffee breaks to cocktail receptions and family celebrations on a private terrace.
