The Story
Toga describes itself as a gastronomic experience with its own style, reinterpreting Latin American and Asian cooking with a different touch, in a small, elegant room on Calle Juanelo, just off Plaza de Cascorro. It holds a Solete in the Guía Repsol, runs a takeaway service, TogaToGo, where anything on the carta can be ordered to take home, and has a sister spot in La Latina, Toguita, built on the same concept.
The Cuisine
Latin American and Asian dishes reworked with Spanish produce, with careful plating and a short, all-sharing carta. The carta, wine list and cocktail list are on the venue's own site.
The Carta
Plates run about €15.50 to €23: Peruvian-style papines a la huancaína with Ibérico pancetta, huevos rotos made with cauliflower instead of potato and white-truffle oil, pisto and Manchego croquetas, a Tosaka seaweed salad with smoked courgette, red-tuna sashimi with a flamed red-curry mayonnaise, noodles with kimchi mayo and raw bluefin, a sea-bass tiradito, a Portobello carpaccio with truffled pecorino, the Uruguayan chivito of thin beef fillet in artisan bread, a squid-ink risotto, a chimi-verde 'false steak tartare', crunchy chili chicken and Ibérico pluma with escalivada and ponzu. The big plate is a 350 g Black Angus ojo de bife with papines and chimichurri (€31). Desserts include an alfajor with dulce de leche, a panqueque with banana mousse and a thyme cheesecake with raspberry ice cream.
Cocktails and Wine
The cocktail list was designed exclusively for Toga and sticks to the same map: a Toga Garden with Hendrick's, sake and shiso, an Arigato of sake liqueur, yuzu and matcha, a Peruano pisco sour with passion fruit, a Japanese Sour, a mezcal Negroni-style Mezcaloni and a mango caipirinha, all €12. The wine list mixes Spanish regions from Rioja and Ribera to Bierzo, Toro and Madrid with Argentine and Uruguayan bottles, and a grower Champagne from Emmanuel Tassin.
